New Years Day Snack
I always make this recipe around Christmas time when none of us can tolerate another huge meal. It's a baked Kasseri Cheese Spread. I found the recipe years ago in Country Home Magazine. Here are a couple of photos of how I served it, and the recipe follows…

Lots of sliced apples, like Honey Crisp, and crackers. A sliced baguette is great too. Serve with a nice chilled Sauvignon Blanc….
The Recipe: Baked Kasseri Cheese Spread
12 oz. kasseri or scamorze chesse shredded. (3 cups)
2 tbsp all purpose flour
2/3 cup kalamata olives pitted and quartered
2 tbsp snipped fresh oregano
1 clove garlic minced
1/4 tsp crushed red pepper
Preheat oven 325
In a medium bowl toss together the cheese and flour. Spread mixture evenly in a 9 inch pie plate or 1 quart quiche dish. Combine the olives, oregano, garlic, and red pepper; sprinkle atop cheese mixture. Bake for 12 to 15 minutes or just until cheese begins to melt. Serve immediately. You can rewarm the cheese if it starts to set too much.
Enjoy!!! judy
