MEDITERRANEAN ANTIPASTA
I made this the other night for Jane and me. It’s our favorite meal, and so nice to have outdoors with the cooler weather we’ve had. Instructions at bottom….
Olives, roasted red peppers with balsamic vinegar, roasted garlic, and hummus.
I also used an organic goat cheese from Latte Da Dairy just up the road from me. All of their cheeses are great!
Assorted olives.
A nice glass of wine is the finishing touch…
Mediterranean Antipasta
2 red bell peppers, roasted and peeled. (instructions here) I put a little balsamic vinegar on top.
3 heads of garlic roasted (instructions here)
assorted olives
Hummus (I purchase ready made)
Goat cheese (Feta is great too)
Toasted baguette and toasted Pita or Nahn
Arrange items on a serving board or platter. Enjoy!!

Looks delicious! I’m so glad you posted this and reminded me about hummus- I go through periods where I overdose on something, having it way too often, and then completely stop. This happened with hummus, but it’s a been a while, and I love the way you’re serving it here. Beautiful photos!
